Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/4 cups eggnog
  • 1 large egg
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate medium bowl, whisk together the eggnog, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with your favorite toppings.

Notes

  • For extra richness, you can substitute half-and-half for some of the eggnog.
  • Top with whipped cream, a dusting of cinnamon, or a drizzle of maple syrup.
  • The batter can be made a day ahead and stored in the refrigerator.
