Make a rich, savory brown gravy from scratch using simple pantry ingredients. This recipe does not require meat drippings and yields a thick, velvety sauce perfect for mashed potatoes or roast beef.

Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth (low sodium preferred)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 teaspoon Worcestershire sauce (optional, for deeper color/flavor)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk the flour into the melted butter until a smooth paste forms. Cook this roux, stirring constantly, for 1 to 2 minutes until it turns a light peanut butter color. Do not let it burn.
  3. Slowly pour in the beef broth while whisking continuously to prevent lumps from forming.
  4. Bring the mixture to a simmer, still whisking occasionally.
  5. Reduce the heat to low and let the gravy simmer for 5 to 8 minutes, or until it thickens to your desired consistency. Stir often.
  6. Stir in the onion powder, garlic powder, salt, pepper, and Worcestershire sauce, if using.
  7. Taste the gravy and adjust salt and pepper as needed before serving hot.

Notes

  • For a darker brown color, cook the roux for an extra minute or two until it reaches a deep brown shade before adding the liquid.
  • If the gravy becomes too thick, whisk in a tablespoon of warm water or broth until the consistency is right.
  • If you have lumps, strain the finished gravy through a fine-mesh sieve.
