Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4-6 pita breads
1 cup tzatziki sauce
1 cup shredded lettuce
1/2 cup chopped tomatoes
1/2 cup thinly sliced red onion
Optional: Kalamata olives, feta cheese
Instructions
Cut chicken thighs into bite-sized pieces.
In a bowl, combine chicken with olive oil, lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
Marinate chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
Cook chicken in a skillet over medium-high heat until browned and cooked through, about 5-7 minutes.
Warm pita breads in a dry skillet or oven.
Assemble gyros: Spread tzatziki sauce on a warm pita. Top with cooked chicken, lettuce, tomatoes, and red onion.
Add optional toppings like olives or feta cheese if desired.
Fold or roll the pita to enjoy your homemade gyro.
Notes
For extra flavor, grill the chicken instead of pan-frying.
You can substitute chicken breasts for thighs, but thighs stay more moist.
Make your own tzatziki sauce for an even more authentic taste.
Prep vegetables ahead of time to make assembly quicker.
