Make soft, pillowy vanilla marshmallows from scratch using simple ingredients. This recipe guides you through creating fluffy homemade marshmallows perfect for hot cocoa or s’mores.

Ingredients

Scale
  • 3 tablespoons unflavored gelatin powder
  • 1/2 cup cold water (for blooming gelatin)
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water (for syrup)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. Lightly grease an 8×8 inch baking pan. Mix the powdered sugar and cornstarch together in a small bowl. Dust the prepared pan thoroughly with half of this mixture, shaking out the excess. Set aside.
  2. In the bowl of a stand mixer, sprinkle the gelatin over 1/2 cup of cold water. Let it sit for 10 minutes to bloom.
  3. While the gelatin blooms, combine the granulated sugar, corn syrup, 1/4 cup water, and salt in a small saucepan. Stir over medium heat until the sugar dissolves. Stop stirring and boil until the mixture reaches 240°F (soft-ball stage) on a candy thermometer.
  4. Once the syrup reaches temperature, remove it from the heat. Turn the stand mixer on low speed. Slowly and carefully pour the hot syrup down the side of the mixing bowl into the gelatin mixture.
  5. Increase the mixer speed to high. Beat for 12 to 15 minutes until the marshmallow mixture is very thick, white, glossy, and holds stiff peaks. Beat in the vanilla extract during the last minute.
  6. Working quickly, scrape the marshmallow mixture into the prepared pan. Use a lightly oiled spatula to spread it evenly. Dust the top generously with the remaining powdered sugar and cornstarch mixture.
  7. Let the marshmallows set uncovered at room temperature for at least 4 hours, or preferably overnight.
  8. Once set, invert the pan onto a cutting board dusted with the sugar mixture. Use a sharp, oiled knife or pizza cutter to cut the slab into squares. Toss the cut sides in the remaining dusting mixture to prevent sticking.

Notes

  • For a cleaner ingredient list, you can substitute the corn syrup with an equal amount of honey or maple syrup, but this may slightly alter the texture and color.
  • If you do not have a stand mixer, you can use a hand mixer, but the process will take longer and require more effort to achieve the necessary stiffness.
  • To make marshmallows for s’mores, cut them into larger cubes before they fully set, about 2 hours in, then dust and let them finish setting.
