Make this creamy and tangy honey mustard chicken salad. It uses a homemade dressing and is perfect for quick lunches, sandwiches, or meal prepping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 1/2 cup mayonnaise (or plain Greek yogurt for a lighter version)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise (or yogurt), Dijon mustard, yellow mustard, honey, and apple cider vinegar until smooth. This is your honey mustard dressing.
  3. Pour the dressing over the shredded chicken.
  4. Add the chopped celery, red onion, and parsley to the bowl.
  5. Mix all ingredients gently until the chicken is evenly coated.
  6. Season with salt and pepper to your preference.
  7. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow flavors to combine.

Notes

  • For a ‘No Mayo’ option, substitute the mayonnaise with 1/2 cup of plain, non-fat Greek yogurt or mashed avocado.
  • Add 4 slices of cooked, crumbled bacon for extra flavor.
  • Mix in 1/2 cup of diced avocado just before serving for a creamy texture boost.
  • This salad is gluten free when served without bread or crackers.
  • This recipe yields about 4 servings.
