Make rich, fudgy brownies that taste like your favorite hot chocolate, complete with a toasted marshmallow topping.

Ingredients

Scale
  • 1 box (18.3 ounces) fudge brownie mix
  • Ingredients listed on brownie mix box (usually eggs, oil, water)
  • 1/2 cup hot chocolate mix (powdered)
  • 1 cup mini marshmallows
  • 1 tablespoon butter (for topping)

Instructions

  1. Preheat your oven according to the brownie mix box directions. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. Prepare the brownie batter according to the box instructions, substituting the required water amount with hot water, if desired, for deeper flavor.
  3. Stir the 1/2 cup of powdered hot chocolate mix thoroughly into the prepared brownie batter until fully combined.
  4. Pour half of the batter into the prepared pan. Sprinkle half of the mini marshmallows evenly over the batter layer.
  5. Gently pour the remaining batter over the marshmallows. Sprinkle the remaining mini marshmallows on top.
  6. Bake according to the box directions for fudgy brownies (usually slightly less time than directed for cake-like).
  7. During the last 2 minutes of baking, place the tablespoon of butter on top of the marshmallows. Turn the oven to broil (high). Watch closely and broil for 1-2 minutes until the marshmallows are puffed and lightly toasted.
  8. Remove from the oven and let the brownies cool completely in the pan before lifting out using the parchment overhang and cutting into squares.

Notes

  • For a richer flavor, use melted butter instead of oil as specified on the box.
  • If you prefer a marshmallow swirl inside the brownie, reserve half the marshmallows for swirling between the two batter layers instead of placing them all on top.
  • If you do not want to broil, you can toast the marshmallows with a kitchen torch after the brownies have cooled slightly.
