Ingredients

Scale
  • 1 cup apple cider
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • For the glaze: 1 cup powdered sugar, 2 tablespoons apple cider, 1/2 teaspoon cinnamon

Instructions

  1. Gently simmer the apple cider in a small saucepan until it reduces to about 1/2 cup. Let it cool completely.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the cooled, reduced apple cider. Mix until just combined. Do not overmix.
  6. Prepare your mini donut pan by greasing it well.
  7. Spoon or pipe the batter into the donut cavities, filling them about two-thirds full.
  8. Bake at 350°F (175°C) for 8 to 10 minutes, or until a toothpick inserted comes out clean.
  9. While the donuts cool slightly, whisk together the powdered sugar, 2 tablespoons of apple cider, and 1/2 teaspoon of cinnamon for the glaze.
  10. Dip the tops of the warm donuts into the glaze. Let the glaze set before serving.

Notes

  • Reducing the cider intensifies the apple flavor in your donuts.
  • You can use a piping bag for easier filling of the mini donut pan.
  • For an extra spice kick, add a pinch of ground cloves to the dry ingredients.
