Ingredients
Scale
1 3/4 cups Oreo cookie crumbs (about 30 cookies)
1/2 cup unsalted butter, melted
1/2 gallon softened vanilla ice cream
1/2 gallon softened chocolate ice cream
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Optional: 1/2 cup crushed peppermint candies or peanut butter swirl
Instructions
Combine the Oreo cookie crumbs and melted butter in a medium bowl. Press this mixture firmly into the bottom and up the sides of a 9-inch pie plate. Freeze the crust for 15 minutes.
Remove the vanilla ice cream from the freezer and let it soften slightly on the counter for about 10 minutes. Spread the softened vanilla ice cream evenly over the frozen crust. Return the pie to the freezer for at least 1 hour until firm.
Soften the chocolate ice cream slightly. Spread the chocolate ice cream over the set vanilla layer. If using optional additions, swirl them in now. Freeze the pie for another 2 hours, or until completely firm.
Prepare the topping: Beat the heavy whipping cream, powdered sugar, and vanilla extract in a bowl until stiff peaks form.
Spread or pipe the whipped cream topping over the frozen pie just before serving.
Slice and serve immediately. Store leftovers in the freezer.
Notes
You can substitute any two ice cream flavors you prefer for the vanilla and chocolate layers.
For a different crust, use 2 cups of graham cracker crumbs instead of Oreos.
If you do not have a full 1/2 gallon of each flavor, use equal parts of two different flavors until the pie is filled.
