A recipe for making a refreshing, homemade iced tea featuring the flavors of blackberry and fresh sage.

Ingredients

Scale
  • 6 cups water
  • 1 cup fresh or frozen blackberries
  • 1/4 cup fresh sage leaves, lightly packed
  • 6 black tea bags or 3 tablespoons loose leaf black tea
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup fresh lemon juice
  • Ice cubes

Instructions

  1. Combine 4 cups of water, blackberries, and sage leaves in a saucepan. Bring the mixture to a simmer over medium heat.
  2. Reduce heat to low and let it gently simmer for 10 minutes to infuse the flavors. Do not boil vigorously.
  3. Remove the saucepan from the heat. Stir in the sugar until it dissolves completely.
  4. Steep the tea bags (or loose leaf tea in an infuser) in the hot blackberry-sage liquid for 5 minutes. Remove the tea bags or infuser.
  5. Strain the liquid through a fine-mesh sieve into a pitcher, pressing gently on the solids to extract all the liquid. Discard the solids.
  6. Stir in the remaining 2 cups of cold water and the lemon juice.
  7. Chill the tea concentrate in the refrigerator for at least 2 hours, or until completely cold.
  8. To serve, fill glasses with ice. Pour the chilled tea over the ice. Garnish with a few fresh blackberries and a small sage leaf if desired.

Notes

  • For a stronger blackberry flavor, you can muddle the berries slightly before simmering.
  • Adjust the amount of sugar based on the sweetness of your blackberries. Taste before chilling.
  • If you prefer a less intense sage flavor, reduce the amount of sage leaves to 2 tablespoons.
  • You can make a simple syrup separately (equal parts sugar and water boiled until dissolved) and use that to sweeten the tea after it is chilled.
