Make this bright, tropical, and earthy iced matcha pineapple refresher at home. This recipe balances sweet pineapple with smooth matcha for a refreshing drink.

Ingredients

Scale
  • 1 teaspoon ceremonial grade matcha powder
  • 2 tablespoons hot (not boiling) water
  • 1 cup pineapple juice, chilled
  • 1/2 cup cold water or coconut water
  • 1 tablespoon simple syrup or sweetener of choice (adjust to taste)
  • Ice cubes
  • Optional: 1/4 cup coconut milk or preferred dairy-free milk for layering

Instructions

  1. In a small bowl, sift the matcha powder. Add the hot water. Whisk vigorously with a bamboo whisk or small electric frother until the matcha is completely dissolved and slightly frothy, creating a concentrate.
  2. In a separate glass, combine the chilled pineapple juice, cold water (or coconut water), and simple syrup. Stir well.
  3. Fill a tall serving glass completely with ice cubes.
  4. Pour the pineapple juice mixture over the ice.
  5. Slowly pour the prepared matcha concentrate over the top of the drink. For a layered look, pour the matcha over the back of a spoon held just above the liquid surface.
  6. Serve immediately with a straw.

Notes

  • Use high-quality matcha for the best flavor and color.
  • If you prefer a thicker drink, blend the pineapple juice, water, and sweetener with a few ice cubes before adding the matcha layer.
  • Adjust the amount of sweetener based on the sweetness of your pineapple juice.
  • For a layered effect, pour the milk alternative first, then the juice mixture, and finally the matcha on top.
