Make this tart and sweet beverage by combining strong hibiscus tea concentrate with fresh strawberry syrup and lemonade base. It is a perfect, cooling drink for warm weather.

Ingredients

Scale
  • 4 cups water
  • 1/2 cup dried hibiscus flowers (or 4 hibiscus tea bags)
  • 1 cup fresh strawberries, hulled and quartered
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 cup fresh lemon juice (about 6-8 lemons)
  • 3 cups cold water (for mixing)
  • Ice cubes
  • Lemon slices and fresh strawberries for garnish

Instructions

  1. Make the hibiscus concentrate: Bring 4 cups of water to a boil. Remove from heat and add the dried hibiscus flowers or tea bags. Steep for 10 minutes. Strain the liquid thoroughly and discard the flowers. Let the concentrate cool completely.
  2. Prepare the strawberry syrup: Combine the quartered strawberries and sugar in a small saucepan with 1/4 cup of water. Heat over medium heat, stirring until the sugar dissolves and the strawberries soften, about 5 to 7 minutes. Mash the strawberries lightly with a spoon. Remove from heat and let cool.
  3. Strain the strawberry mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract the syrup. Discard the solids.
  4. Combine the drink: In a large pitcher, mix the cooled hibiscus concentrate, the strawberry syrup, and the fresh lemon juice.
  5. Add the remaining 3 cups of cold water and stir well. Taste the mixture and adjust sweetness or tartness if needed by adding more sugar dissolved in a little hot water, or more lemon juice.
  6. To serve, fill glasses with ice cubes. Pour the strawberry hibiscus lemonade over the ice. Garnish each glass with a lemon slice and a fresh strawberry slice.

Notes

  • For a less sweet drink, reduce the sugar in the strawberry syrup to 1/4 cup or use a sugar substitute.
  • If you prefer a smoother texture, strain the strawberry syrup twice or blend the strawberries with the sugar and a little water, then strain.
  • You can steep the hibiscus for longer (up to 15 minutes) for a stronger flavor, but it may become slightly more bitter.
