Make this Immunity-Boosting Carrot Turmeric Soup when you need warm, comforting flavor. This recipe brings together bright carrots and earthy turmeric for a dish perfect for colder months.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 pound carrots, peeled and chopped
  • 1 inch fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 4 cups vegetable broth
  • 1/2 cup full-fat coconut milk (optional, for creaminess)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, turmeric, and cumin. Cook for 1 minute until fragrant.
  4. Add the chopped carrots and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat, cover, and simmer until the carrots are very tender, about 15-20 minutes.
  6. Remove the pot from the heat. Carefully blend the soup using an immersion blender until completely smooth. Alternatively, transfer in batches to a standard blender and blend, returning the soup to the pot.
  7. Stir in the coconut milk, if using. Heat gently until warmed through; do not boil.
  8. Season with salt and pepper to your preference.
  9. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For a richer flavor, roast the carrots for 15 minutes before adding them to the soup base.
  • If you do not have fresh ginger, substitute with 1/2 teaspoon ground ginger.
  • Taste the soup before adding extra salt; broth salinity varies.
  • This soup freezes well for future quick meals.
