Create a delicious and creamy Instant Pot Beef Stroganoff quickly and easily. This recipe features tender beef and mushrooms in a rich, savory sauce, perfect for a weeknight meal.

Ingredients

Scale
  • 2 lbs beef sirloin, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
  • 1/2 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Cooked egg noodles, for serving

Instructions

  1. Season beef pieces with salt and pepper.
  2. Set Instant Pot to ‘Sauté’ mode. Add olive oil. Once hot, brown beef in batches. Remove beef and set aside.
  3. Add chopped onion and sliced mushrooms to the Instant Pot. Cook until softened, about 5-7 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in flour and cook for 1 minute, stirring constantly.
  6. Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pot.
  7. Return the browned beef to the Instant Pot.
  8. Secure the lid and set the valve to sealing. Cook on ‘Manual’ or ‘Pressure Cook’ mode on high pressure for 10 minutes.
  9. Once cooking is complete, perform a quick release of the pressure.
  10. Stir in sour cream, Worcestershire sauce, and Dijon mustard. Stir until the sauce is smooth and creamy.
  11. Taste and adjust seasoning if needed.
  12. Serve hot over cooked egg noodles, garnished with fresh parsley.

Notes

  • For a thicker sauce, you can simmer the stroganoff uncovered on ‘Sauté’ mode for a few extra minutes after adding the sour cream mixture.
  • Feel free to add other vegetables like peas or carrots along with the onions and mushrooms.
  • Ensure the pressure release valve is set to ‘sealing’ before cooking.
