Enjoy a comforting bowl of Instant Pot Chicken and Dumplings, a perfect weeknight meal for cooler weather. This recipe is warm, hearty, and easy to make.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup all-purpose flour
  • 1/4 cup cold water
  • 1 can (13.5 ounces) full-fat coconut milk
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in the Instant Pot on the Sauté setting. Add chicken pieces and season with salt, pepper, thyme, garlic powder, and onion powder. Cook until browned on all sides, about 5-7 minutes.
  2. Add chicken broth, carrots, celery, and onion to the Instant Pot. Stir to combine.
  3. Secure the lid and set the valve to sealing. Cook on High Pressure for 5 minutes.
  4. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.
  5. In a small bowl, whisk together the flour and cold water until smooth.
  6. Stir the flour mixture and coconut milk into the Instant Pot. Select the Sauté setting and bring the mixture to a simmer, stirring constantly until it thickens, about 5 minutes.
  7. Stir in fresh parsley. Serve hot.

Notes

  • For a richer flavor, you can use chicken thighs instead of chicken breasts.
  • If you don’t have an Instant Pot, you can adapt this recipe for a stovetop by simmering the chicken and vegetables in broth until cooked through, then thickening with the flour and water mixture.
  • Feel free to add other vegetables like peas or corn.
