Make authentic Chicken Pozole Verde quickly using your Instant Pot. This recipe cooks the chicken and simmers the broth efficiently for a flavorful green soup.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (28 ounce) can hominy, drained and rinsed
  • 1 lb tomatillos, husked and rinsed
  • 1 white onion, quartered
  • 4 cloves garlic
  • 2 jalapeƱos, stems removed (seeds optional for less heat)
  • 1 poblano pepper, stemmed and seeded
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup fresh cilantro

Instructions

  1. Place the tomatillos, onion quarters, garlic cloves, jalapeƱos, and poblano pepper in the Instant Pot liner.
  2. Pour 1 cup of the chicken broth over the vegetables.
  3. Secure the lid and set the valve to sealing. Cook on Manual/Pressure Cook for 5 minutes.
  4. When cooking finishes, perform a Quick Release of the pressure. Carefully remove the cooked vegetables and cilantro using a slotted spoon and set them aside to cool slightly. Reserve the cooking liquid in the pot.
  5. Once the vegetables are cool enough to handle, place them in a blender with the remaining 3 cups of chicken broth. Blend until completely smooth. This is your green sauce.
  6. Return the Instant Pot liner to the base. Add the olive oil and select the SautƩ function.
  7. Add the chicken breasts/thighs to the pot. Pour the blended green sauce over the chicken. Stir in the cumin, oregano, salt, and pepper.
  8. Secure the lid and set the valve to sealing. Cook on Manual/Pressure Cook on High for 10 minutes.
  9. When cooking finishes, perform a Natural Pressure Release for 10 minutes, then manually release any remaining pressure.
  10. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
  11. Stir in the drained hominy. Select the SautƩ function and bring the soup to a gentle simmer for 5 minutes to heat the hominy through. Taste and adjust salt if needed.
  12. Serve hot with your choice of garnishes.

Notes

  • For serving, offer bowls of shredded cabbage, sliced radishes, lime wedges, diced avocado, and dried Mexican oregano.
  • If you prefer a spicier broth, leave the seeds in the jalapeƱos or add one serrano pepper to the sauce blend.
  • If you use frozen hominy, you may need to add 5 extra minutes to the final simmer time to heat it completely.
