Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chicken broth
  • 1 large onion, roughly chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups long-grain white rice, rinsed

Instructions

  1. In a bowl, combine the chicken pieces with olive oil, lemon juice, cumin, coriander, turmeric, paprika, garlic powder, oregano, cinnamon, ginger, salt, and pepper. Mix well to coat the chicken. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Set the Instant Pot to ‘Sauté’ mode. Add the chopped onion and cook until softened, about 3 minutes. Remove the onions and set them aside.
  3. Add the marinated chicken pieces to the inner pot in a single layer if possible. Cook on ‘Sauté’ for 3-4 minutes, stirring occasionally, until lightly browned on the edges.
  4. Pour in the chicken broth and scrape up any browned bits stuck to the bottom of the pot.
  5. Place the rinsed rice into the pot, distributing it evenly over the chicken mixture. Do not stir the rice.
  6. Secure the lid and set the valve to ‘Sealing’. Select ‘Pressure Cook’ or ‘Manual’ mode on High pressure for 7 minutes.
  7. Once cooking is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to ‘Venting’ for a Quick Release (QR) of any remaining pressure.
  8. Open the lid. Fluff the rice gently with a fork, mixing in the cooked onions. Serve the chicken and rice immediately.

Notes

  • For a more authentic texture, you can briefly broil the cooked chicken pieces under a broiler for 2 minutes after fluffing the rice.
  • Serve this dish with a drizzle of tahini sauce or plain yogurt mixed with garlic.
  • Add chopped parsley or thinly sliced tomatoes as a fresh topping.
