Make a rich, creamy chicken alfredo pasta entirely in your Instant Pot for a fast, easy weeknight dinner.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 12 ounces fettuccine pasta, uncooked
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons unsalted butter
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Place the cubed chicken, uncooked pasta, chicken broth, salt, pepper, garlic powder, and onion powder into the inner pot of your Instant Pot. Do not stir excessively.
  2. Secure the lid and set the vent to sealing. Cook on Manual/Pressure Cook setting on High pressure for 5 minutes.
  3. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully quick release any remaining pressure.
  4. Open the lid. Remove the chicken pieces and set them aside.
  5. Set the Instant Pot to Sauté mode (Normal setting).
  6. Whisk the cornstarch slurry into the liquid in the pot. Let it simmer for 1-2 minutes until the sauce begins to thicken slightly.
  7. Reduce the heat to Low (or press Cancel and let it cool slightly). Stir in the heavy cream, butter, and grated Parmesan cheese until smooth. Do not let the sauce boil after adding the cream and cheese.
  8. Return the cooked chicken to the pot. Stir everything together until the chicken is coated and the sauce is creamy.
  9. Serve immediately topped with extra Parmesan cheese.

Notes

  • For the creamiest sauce, add the heavy cream and Parmesan cheese only after the pressure cooking cycle is complete and the pot is on the Sauté setting. Boiling dairy under pressure can cause separation.
  • If the sauce is too thin after adding the dairy, use the cornstarch slurry trick mentioned in step 6.
  • You can substitute chicken thighs for breasts, but adjust the cooking time if the pieces are significantly larger or smaller.
