Make a rich and flavorful creamy chicken taco soup quickly using your Instant Pot. This one-pot recipe is simple to prepare and perfect for a weeknight dinner.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 4 cups chicken broth
  • 1 packet (1 ounce) taco seasoning mix
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 8 ounces cream cheese, cut into cubes
  • 1/2 cup heavy cream or sour cream (optional, for extra creaminess)
  • 1 cup frozen corn

Instructions

  1. Place the chicken breasts, black beans, kidney beans, diced tomatoes with chilies, cream of chicken soup, chicken broth, taco seasoning, cumin, and chili powder into the inner pot of your Instant Pot. Do not stir yet.
  2. Secure the lid and set the vent to the sealing position.
  3. Cook on Manual/Pressure Cook setting on High pressure for 10 minutes.
  4. When cooking finishes, allow for a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to the venting position to release any remaining pressure (Quick Release).
  5. Carefully remove the chicken breasts from the pot and place them on a cutting board. Shred the chicken using two forks.
  6. Return the shredded chicken to the pot. Add the cubed cream cheese and stir until the cheese is completely melted and the soup is smooth.
  7. Stir in the frozen corn and the heavy cream or sour cream, if using. Let the soup sit on the Keep Warm setting for 5 minutes to heat the corn through and fully incorporate the cream.
  8. Stir well before serving.

Notes

  • For the creamiest texture, ensure the cream cheese is at room temperature before adding it, or cut it into smaller cubes.
  • If the soup seems too thick after adding the cream, add a splash more chicken broth until you reach your desired consistency.
  • Serve topped with crushed tortilla chips, shredded cheddar cheese, avocado slices, or a dollop of sour cream.
