Ingredients
Scale
3 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon sugar
2 cloves garlic, minced
1/2 cup dry white wine (like Sauvignon Blanc)
6 cups beef broth, low sodium
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme leaves
1/4 cup all-purpose flour
4 slices French baguette, toasted
4 ounces Gruyère cheese, shredded
Instructions
Set the Instant Pot to the Sauté function (Normal setting). Add butter and olive oil. When the butter melts, add the sliced onions, salt, and sugar.
Sauté the onions for 15 to 20 minutes, stirring often, until they are deeply browned and caramelized. This step builds the necessary flavor base.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let the wine reduce for 2 minutes.
Stir in the flour until it dissolves into the onions and liquid.
Pour in the beef broth, Worcestershire sauce, and thyme. Stir well to combine.
Secure the lid and set the vent to Sealing. Cook on Manual/Pressure Cook setting on High for 10 minutes.
When cooking is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
Ladle the soup into oven-safe bowls. Place one toasted baguette slice on top of the soup in each bowl.
Top the bread with shredded Gruyère cheese. Place the bowls on a baking sheet.
Broil on high in your oven or toaster oven for 2 to 4 minutes, watching closely, until the cheese is melted and bubbly brown. Serve immediately.
Notes
For the best caramelization in the Instant Pot, do not rush the initial 15-20 minute sauté time.
Use high-quality, low-sodium beef broth for the richest flavor.
If you do not have oven-safe bowls, you can broil the cheese on the bread slices separately and then float them on top of the soup.
