Make tender, sweet, and spicy chicken quickly using your Instant Pot. This recipe creates a sticky honey sriracha glaze perfect for weeknight dinners.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 tablespoons Sriracha sauce (adjust to your heat preference)
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Optional: Green onions and sesame seeds for garnish

Instructions

  1. Place the chicken pieces in the inner pot of your Instant Pot.
  2. In a separate bowl, whisk together the chicken broth, soy sauce, honey, Sriracha, minced garlic, and ground ginger.
  3. Pour the sauce mixture over the chicken in the Instant Pot.
  4. Secure the lid and set the vent to sealing.
  5. Cook on High Pressure for 8 minutes for breasts or 10 minutes for thighs.
  6. Allow for a Natural Pressure Release (NPR) for 5 minutes, then carefully move the valve to quick release any remaining pressure.
  7. Remove the chicken and set it aside on a plate.
  8. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  9. Set the Instant Pot to the Sauté function. Pour the slurry into the liquid remaining in the pot and stir constantly until the sauce thickens, about 1-2 minutes.
  10. Return the chicken to the pot and toss to coat thoroughly in the thickened honey sriracha sauce.
  11. Serve immediately, garnished with green onions and sesame seeds if desired.

Notes

  • For thicker sauce, increase the cornstarch to 1.5 tablespoons.
  • If you prefer a stickier glaze, remove the chicken after cooking and use the Sauté function to reduce the sauce by half before tossing the chicken back in.
  • Chicken thighs stay more moist than breasts when pressure cooked.
  • You can use frozen chicken, but increase the high-pressure cook time by 3 minutes.
