Make flavorful, sweet and savory Korean-style ground beef quickly using your Instant Pot. This recipe provides a simple method for a satisfying weeknight dinner served over rice.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 cup water or beef broth
  • 2 cups uncooked white rice
  • 2 cups water (for rice)
  • For Serving: Sliced green onions, toasted sesame seeds, optional kimchi

Instructions

  1. In the Instant Pot inner pot, combine the ground beef, soy sauce, brown sugar, sesame oil, rice vinegar, ginger, garlic, and black pepper. Stir well to mix the sauce with the beef.
  2. Pour the 1/2 cup of water or broth over the mixture. Do not stir again after adding the liquid.
  3. Secure the lid on the Instant Pot and set the valve to Sealing. Select Manual or Pressure Cook (High Pressure) for 5 minutes.
  4. When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully perform a Quick Release (QR) for any remaining pressure.
  5. Remove the lid. Use a wooden spoon to break up the beef into smaller pieces while stirring it into the sauce. Set the Instant Pot to Sauté mode (Normal setting). Let the sauce simmer and thicken for 3 to 5 minutes, stirring often, until it coats the beef nicely.
  6. While the beef is thickening, cook the rice separately according to package directions or use the Instant Pot’s Rice setting (2 cups rice to 2 cups water, High Pressure for 3 minutes, 10 minutes NPR).
  7. To assemble the bowls, place a serving of rice in each bowl. Top with the saucy Korean ground beef. Garnish with sliced green onions and sesame seeds.

Notes

  • For a slightly sweeter sauce, increase the brown sugar by one tablespoon.
  • If you prefer a thicker sauce, continue simmering on Sauté mode until the liquid reduces to your liking.
  • You can cook the rice in a separate small pot on the stove while the beef pressure cooks for maximum time savings.
