Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
For the Filling:
1 (15 ounce) can pumpkin puree
1/2 cup packed brown sugar
1 egg yolk
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/4 cup powdered sugar, for dusting (optional)
Instructions
Prepare the Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be soft.
Cover the dough and chill in the refrigerator for at least 1 hour.
Prepare the Pumpkin Filling: In a medium bowl, whisk together the pumpkin puree, brown sugar, egg yolk, pumpkin pie spice, and salt until smooth.
Assemble the Cookies: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
Take about half of the chilled cookie dough and place it in a bowl. Add a few drops of orange food coloring if desired for a more vibrant Jack-O’-Lantern color. Mix gently until the color is incorporated.
Scoop about 1 tablespoon of the pumpkin filling onto a small plate.
Take about 2 tablespoons of the cookie dough (regular or colored). Flatten it into a disc in your palm. Place a tablespoon of the pumpkin filling in the center.
Carefully wrap the cookie dough around the filling, ensuring it is completely enclosed. Gently shape into a ball.
Place the dough ball on the prepared baking sheet. Repeat with the remaining dough and filling.
Create the Jack-O’-Lantern Face: Using a small knife or a skewer, carefully carve simple Jack-O’-Lantern faces into the top of each cookie dough ball. Cut out small triangles for eyes and a nose, and a jagged shape for the mouth.
Bake the Cookies: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Optional: Dust with powdered sugar before serving for an extra touch.
Notes
Ensure the cookie dough is well-chilled for easier handling.
Don’t overmix the cookie dough once the dry ingredients are added.
The pumpkin filling can be made ahead of time and stored in the refrigerator.
Adjust the size of the filling to your preference, but ensure there’s enough dough to fully enclose it.
Be gentle when carving the faces to avoid breaking the dough.
