Follow these simple steps for a tender, juicy pork loin roast cooked perfectly in the oven, complete with instructions for a quick pan sauce.

Ingredients

Scale
  • 3 lb pork loin roast, bone-out
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 400 degrees F. Pat the pork loin roast completely dry with paper towels.
  2. In a small bowl, mix together the kosher salt, pepper, garlic powder, thyme, and paprika.
  3. Rub the entire surface of the pork loin with olive oil. Sprinkle the seasoning mixture evenly over the roast, pressing it gently to adhere.
  4. Place the seasoned pork loin in a roasting pan or on a rimmed baking sheet.
  5. Roast at 400 degrees F for 15 minutes.
  6. Reduce the oven temperature to 350 degrees F. Continue roasting until an instant-read thermometer inserted into the thickest part registers 145 degrees F. This usually takes about 20 minutes per pound, depending on your roast size. For a 3 lb roast, this is approximately 60 minutes total cooking time after the initial high-heat blast.
  7. Remove the pork loin roast from the oven when it reaches 145 degrees F internal temperature.
  8. Transfer the roast to a cutting board, tent loosely with foil, and let it rest for 10 to 15 minutes before slicing. This resting period is key for a juicy pork loin.
  9. While the pork rests, make a quick pan sauce: Place the roasting pan over medium heat on the stovetop (if safe) or pour the drippings into a small saucepan. Add 1 cup of chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly, then whisk in 1 tablespoon of cold butter until the sauce thickens slightly.
  10. Slice the pork loin against the grain and serve immediately with the pan sauce gravy.

Notes

  • For the best results and a truly juicy pork loin, use a meat thermometer. 145 degrees F is the safe and ideal internal temperature.
  • If you prefer a crispier exterior, you can sear the roast in an oven-safe skillet with oil on all sides before putting it in the oven.
  • This recipe works well for a weeknight dinner or a simple Sunday roast.
