Ingredients

Scale
  • 1 medium head of cauliflower (about 4 cups riced)
  • 1 large egg, lightly beaten
  • 1/2 cup shredded mozzarella cheese (low moisture, part-skim)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 2 tablespoons low-sugar pizza sauce
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Your favorite low-carb vegetable toppings (e.g., bell peppers, mushrooms, spinach)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rice the cauliflower using a food processor or a box grater until it resembles rice grains.
  3. Steam or microwave the riced cauliflower until soft, about 5-7 minutes. Let it cool slightly.
  4. Place the cooled cauliflower rice in a clean kitchen towel or several layers of cheesecloth. Squeeze out as much moisture as possible. This step is key for a crispy crust.
  5. In a medium bowl, combine the dried cauliflower, beaten egg, 1/2 cup mozzarella, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well until a dough forms.
  6. Transfer the mixture to the prepared baking sheet. Press it firmly into a 10-inch round crust, about 1/4 inch thick.
  7. Bake the crust for 15-20 minutes, or until it is golden brown and firm.
  8. Remove the crust from the oven. Spread the pizza sauce evenly over the crust.
  9. Sprinkle the remaining 1/2 cup of mozzarella cheese and arrange your vegetable toppings over the sauce.
  10. Return the pizza to the oven and bake for another 5-10 minutes, until the cheese is melted and bubbly.
  11. Let the pizza cool for a few minutes before slicing and serving.

Notes

  • Squeezing the water out of the cauliflower is the most important step for a non-soggy crust.
  • You can substitute almond flour for a little extra binding if your mixture seems too wet, but usually, the egg is enough.
  • Pre-baking the crust without toppings gives it structure before adding weight.
  • Use high-quality, low-sugar pizza sauce to keep your carbs down.
