A simple recipe for juicy chicken breasts stuffed with a rich mixture of spinach and cheese, perfect for a low-carb ketogenic diet.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, finely chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a medium bowl, combine the softened cream cheese, chopped spinach, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until the stuffing is uniform.
  3. Take one chicken breast and use a sharp knife to cut a deep pocket into the thickest side, being careful not to cut all the way through to the other side.
  4. Spoon one-fourth of the cheese and spinach mixture into the pocket of each chicken breast. You can secure the opening with toothpicks if the stuffing seems loose.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until lightly golden brown.
  6. Transfer the skillet to the preheated oven. Bake for 18-22 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the juices run clear.
  7. Remove the toothpicks before serving.

Notes

  • To prevent stuffing leakage, do not overfill the pockets. Secure the opening with one or two toothpicks.
  • For a crispier exterior, you can briefly place the chicken under the broiler for the last 1-2 minutes of cooking.
  • Serve with a side of steamed broccoli or a large green salad with an olive oil dressing for a complete keto meal.
