Preheat your oven to 400°F (200°C) if baking, or prepare a large skillet over medium heat if pan-frying.
Pound the chicken cutlets to an even 1/4-inch thickness.
In a shallow dish, combine the almond flour, 1/4 cup Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
In a second shallow dish, beat the egg.
Dip each chicken cutlet first into the beaten egg, letting excess drip off.
Dredge the cutlet thoroughly in the almond flour mixture, pressing gently to make the coating adhere.
If pan-frying: Heat olive oil in the skillet. Cook chicken for 3-4 minutes per side until golden brown and cooked through. Remove and place on a baking sheet.
If baking: Place coated cutlets on a lightly oiled baking sheet or one sprayed with cooking spray. Bake for 15 minutes.
Spread about 2 tablespoons of marinara sauce over each chicken cutlet.
Top each with a slice of mozzarella cheese and a sprinkle of the remaining 1/2 cup Parmesan cheese.
Return to the oven (or continue baking if you pan-fried) for 5-7 minutes, or until the cheese is melted and bubbly.
Serve immediately.
Notes
For extra crispiness when baking, you can lightly spray the tops of the coated chicken with cooking spray before adding sauce and cheese.
Use an air fryer by cooking at 380°F for 10-12 minutes, then adding toppings and cooking for another 3-5 minutes until cheese melts.
Check your marinara sauce label to confirm it is low in sugar to keep the meal keto-compliant.
