Ingredients
Scale
4 large eggs
1/4 cup coconut flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsweetened almond milk (or heavy cream for richer texture)
1 tablespoon melted butter or coconut oil, plus more for cooking
1 teaspoon vanilla extract
For the Sauce: 1 cup mixed berries (frozen or fresh)
For the Sauce: 2 tablespoons erythritol or monk fruit sweetener
For the Sauce: 1 tablespoon water
Instructions
Prepare the Berry Sauce: Combine berries, sweetener, and water in a small saucepan. Heat over medium heat. Simmer for 5 to 7 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly. Remove from heat and set aside.
Mix Dry Ingredients: In a medium bowl, whisk together the coconut flour, baking powder, and salt.
Mix Wet Ingredients: In a separate bowl, whisk the eggs until light and frothy. Whisk in the almond milk, melted butter, and vanilla extract until combined.
Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. The batter will be thick. Let the batter rest for 5 minutes to allow the coconut flour to absorb the liquid.
Cook Pancakes: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil.
Drop batter onto the hot surface using a tablespoon or small ice cream scoop. Cook for 3 to 4 minutes per side, until golden brown and set. Coconut flour pancakes cook slower than traditional pancakes, so keep the heat low to prevent burning.
Serve immediately topped with the warm berry sauce.
Notes
For fluffier pancakes, separate the egg whites, whip them to soft peaks, and gently fold them into the batter at the end.
If the batter seems too thick after resting, add one teaspoon of almond milk at a time until you reach a thick, spoonable consistency.
You can substitute the berries with sugar-free maple syrup if preferred.
