Make this easy, high-fat, low-carb casserole featuring shredded chicken in a rich, creamy buffalo sauce, perfect for a satisfying keto dinner.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 cup full-fat sour cream
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce (or similar keto-friendly hot sauce)
  • 1/4 cup unsalted butter, melted
  • 1 cup shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled blue cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a large bowl, mix the softened cream cheese, heavy cream, sour cream, hot sauce, melted butter, garlic powder, salt, and pepper until smooth and well combined.
  3. Fold in the shredded chicken and half (1/2 cup) of the cheddar cheese into the cream cheese mixture until everything is evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  5. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. If using, sprinkle the blue cheese crumbles over the cheddar.
  6. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly browned.
  7. Let the casserole rest for 5 minutes before serving.

Notes

  • For a crispier top, mix 1/4 cup almond flour with 1 tablespoon melted butter and sprinkle over the cheese before baking.
  • You can prepare this casserole completely ahead of time; cover and refrigerate for up to 24 hours, then add 10 minutes to the baking time if baking straight from the refrigerator.
  • Adjust the amount of hot sauce to control the spice level for your preference.
