A rich, no-bake, low-carbohydrate mousse that combines deep chocolate flavor with the creamy tang of cheesecake.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup keto powdered sweetener (like erythritol or monk fruit blend)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted (optional, for extra richness)

Instructions

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the keto powdered sweetener, cocoa powder, vanilla extract, and salt to the cream cheese mixture. Beat until fully combined and smooth.
  3. If using, mix in the melted butter until incorporated.
  4. In a separate, chilled bowl, whip the heavy whipping cream until stiff peaks form.
  5. Gently fold about one-third of the whipped cream into the chocolate cream cheese mixture to lighten it.
  6. Carefully fold in the remaining whipped cream until no white streaks remain, being careful not to deflate the mixture.
  7. Spoon the mousse into individual serving dishes or ramekins.
  8. Chill in the refrigerator for at least 2 hours before serving to allow it to set.

Notes

  • For a stronger cheesecake flavor, add 1/2 teaspoon of lemon juice to the cream cheese mixture before folding in the whipped cream.
  • Use high-quality unsweetened cocoa powder for the best chocolate flavor.
  • If you prefer a firmer mousse, chill for 4 hours or more.
