Ingredients
Scale
1 lb large shrimp, peeled and deveined
4 tablespoons butter
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth
1/4 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
Salt and black pepper to taste
Instructions
Pat the shrimp dry and season lightly with salt and pepper.
Melt the butter in a large skillet over medium heat.
Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 30 seconds until fragrant. Do not let the garlic burn.
Add the shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
Pour the chicken broth into the skillet and scrape up any browned bits from the bottom. Let it simmer for 1 minute.
Reduce the heat to low. Stir in the heavy cream and Italian seasoning. Let the sauce warm through for 2 minutes.
Whisk in the grated Parmesan cheese until the sauce thickens slightly and becomes smooth. Taste and adjust salt and pepper.
Return the cooked shrimp to the skillet. Toss gently to coat the shrimp in the creamy sauce.
Remove from heat, stir in the fresh parsley, and serve immediately.
Notes
For a thicker sauce without adding carbs, simmer the sauce slightly longer before adding the shrimp back in.
You can substitute heavy cream with full-fat coconut cream for a dairy-free keto option, though the flavor will change slightly.
Use shrimp that is medium or large size for the best texture in this quick skillet meal.
