This recipe creates a rich, low-carb egg salad inspired by deviled eggs, featuring a creamy texture and a strong fresh herb flavor. It is suitable for keto diets and works well as a spread or filling.

Ingredients

Scale
  • 12 large eggs
  • 1/2 cup full-fat mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over high heat. Once boiling, remove the pan from the heat, cover it, and let the eggs stand for 10 minutes.
  2. Immediately transfer the eggs to an ice bath to stop the cooking process. Let them cool completely, then peel the eggs.
  3. Cut the peeled eggs in half lengthwise. Scoop the yolks into a medium bowl and place the whites on a cutting board.
  4. Roughly chop the egg whites and set them aside.
  5. Mash the egg yolks in the bowl until mostly smooth.
  6. Add the mayonnaise, Dijon mustard, and lemon juice to the mashed yolks. Mix until well combined and creamy.
  7. Stir in the chopped dill, chives, parsley, salt, pepper, and garlic powder. Mix thoroughly.
  8. Gently fold the chopped egg whites into the yolk mixture until just combined. Do not overmix.
  9. Taste and adjust seasoning if necessary. Chill the salad for at least 30 minutes before serving for the best flavor.

Notes

  • For a thicker salad, reduce the amount of mayonnaise slightly.
  • You can substitute dried herbs for fresh, using about one-third the amount listed.
  • Serve this salad on lettuce cups, celery sticks, or keto crackers.
