Prepare tender, pan-seared steak bites coated in a rich, low-carb, creamy peppercorn sauce suitable for a ketogenic diet.

Ingredients

Scale
  • 1.5 lb sirloin or tenderloin steak, cut into 1-inch cubes
  • 2 tablespoons avocado oil or ghee
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper (for seasoning steak)
  • 1 tablespoon whole black peppercorns, coarsely crushed
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup heavy whipping cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak cubes dry with paper towels and season them evenly with salt and 1/2 teaspoon black pepper.
  2. Heat the avocado oil or ghee in a large skillet over medium-high heat until shimmering.
  3. Add the steak cubes to the hot skillet in a single layer, avoiding overcrowding. Sear for 2-3 minutes per side until browned. Remove the steak from the skillet and set aside.
  4. Reduce the heat to medium. Add the crushed black peppercorns to the skillet and toast for 30 seconds until fragrant.
  5. Add the minced garlic and cook for 1 minute until aromatic.
  6. Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Let the broth reduce by half, about 3 minutes.
  7. Stir in the heavy cream and Dijon mustard. Bring the sauce to a gentle simmer and cook until it thickens slightly, about 3-4 minutes.
  8. Reduce the heat to low. Whisk in the butter until the sauce is smooth and creamy. Taste and adjust salt if needed.
  9. Return the seared steak bites to the skillet. Toss gently to coat them completely in the creamy peppercorn sauce. Cook for 1 minute to reheat the steak.
  10. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

  • For best searing results, cook the steak in batches rather than all at once.
  • Use a meat mallet to lightly pound the steak cubes before cutting to help tenderize them slightly.
  • If you prefer a thicker sauce without adding carbs, whisk in 1/2 teaspoon of xanthan gum with a tablespoon of cold water before adding it to the simmering cream.
