Ingredients
Scale
1 lb boneless, skinless chicken tenders
1 cup crushed pork rinds (or almond flour)
1/2 cup grated Parmesan cheese, divided
1 large egg, beaten
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large Romaine lettuce leaves (or 4 keto tortillas)
2 cups chopped Romaine lettuce hearts
1/2 cup keto Caesar dressing
2 tablespoons extra grated Parmesan cheese for topping
Instructions
Preheat your air fryer to 380°F (195°C). If baking, preheat oven to 400°F (200°C).
In a shallow dish, combine the crushed pork rinds, 1/4 cup of the Parmesan cheese, garlic powder, salt, and pepper. Mix well.
Dip each chicken tender first into the beaten egg, letting excess drip off.
Dredge the egg-coated tender thoroughly in the pork rind mixture, pressing firmly to coat completely.
Place the coated tenders in the air fryer basket in a single layer. Air fry for 12-15 minutes, flipping halfway, until golden brown and cooked through (internal temperature 165°F). If baking, place on a wire rack over a baking sheet and bake for 18-20 minutes.
While the chicken cooks, prepare your wraps. If using lettuce, wash and dry the large Romaine leaves thoroughly.
In a bowl, toss the chopped Romaine hearts with the keto Caesar dressing and the remaining 1/4 cup of Parmesan cheese.
Slice the crispy chicken tenders into strips.
Lay out your lettuce leaves or keto tortillas. Place a portion of the dressed salad mixture down the center of each wrap base.
Top the salad mixture with the sliced crispy chicken tenders.
Sprinkle the remaining 2 tablespoons of Parmesan cheese over the filling.
Fold the sides of the lettuce leaf or tortilla inward and roll tightly to form a wrap. Serve immediately.
Notes
For extra crispiness when air frying, lightly spray the coated tenders with cooking spray before cooking.
If you prefer a softer coating, substitute almond flour for the pork rinds, though the texture will be less crunchy.
Make sure your Romaine leaves are very dry to prevent the wrap from becoming soggy.
