Prepare simple, flavorful chicken skewers adhering to ketogenic guidelines using a bright lemon and garlic marinade. This recipe is low in carbohydrates and suitable for grilling or baking.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Wooden or metal skewers (if using wood, soak them for 30 minutes)

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, tossing to coat all pieces evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F (200°C). If baking, line a baking sheet with parchment paper.
  4. Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece. Discard any remaining marinade.
  5. If grilling, place the skewers on the oiled grates. Grill for 10 to 14 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. If baking, arrange the skewers on the prepared baking sheet. Bake for 18 to 22 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
  7. Remove the skewers from the heat. Garnish with fresh chopped parsley before serving.

Notes

  • For a dairy-free option, this recipe contains no dairy.
  • If you prefer a slightly sweeter flavor without adding sugar, you can add a few drops of liquid stevia to the marinade.
  • Serve these skewers with a side of avocado slices or a large green salad dressed with olive oil and vinegar.
