Make these easy, high-fat stuffed avocados using seasoned ground beef as a low-carb alternative to tacos.

Ingredients

Scale
  • 2 large ripe avocados
  • 1 pound ground beef
  • 1 tablespoon taco seasoning (ensure it is keto-friendly)
  • 1/4 cup water
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess fat.
  2. Stir the taco seasoning and water into the cooked beef. Simmer for 5 minutes until the liquid reduces slightly.
  3. While the meat simmers, prepare the crema by mixing the sour cream, lime juice, lime zest, and cilantro in a small bowl. Season with salt and pepper.
  4. Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of the avocado flesh from the center of each half to make more room for the filling. Dice the removed flesh and set aside.
  5. Spoon the seasoned ground beef mixture evenly into the four avocado halves.
  6. Top each stuffed half generously with the shredded cheese.
  7. Place the stuffed avocados on a baking sheet. Broil for 2 to 4 minutes, watching closely, until the cheese is melted and bubbly.
  8. Remove from the oven and drizzle the cilantro lime crema over the top of the hot filling.
  9. Garnish with the reserved diced avocado flesh, if desired. Serve immediately.

Notes

  • For a different protein, substitute the ground beef with shredded cooked chicken or ground turkey.
  • If you prefer a smoother filling, mash the reserved avocado flesh and mix it into the cooked meat before stuffing.
  • You can substitute the sour cream in the crema with full-fat cream cheese softened slightly.
