Ingredients
Scale
1 (14.75 ounce) can salmon, drained and skin/bones removed
1/2 cup bread crumbs
1/4 cup finely chopped fresh dill
1 large egg, lightly beaten
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/4 cup finely chopped onion
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon olive oil for frying
Instructions
In a medium bowl, flake the drained salmon using a fork.
Add the bread crumbs, fresh dill, egg, lemon juice, lemon zest, chopped onion, salt, and pepper to the bowl.
Mix all ingredients gently until just combined. Do not overmix.
Form the mixture into 4 equal patties, about 1 inch thick.
Heat the olive oil in a large skillet over medium heat.
Carefully place the salmon patties in the hot skillet.
Cook for 4 to 5 minutes per side, until golden brown and heated through.
Remove from the skillet and serve immediately.
Notes
For a gluten-free option, substitute regular bread crumbs with gluten-free bread crumbs or almond flour.
If you prefer a firmer patty, chill the formed patties for 15 minutes before cooking.
Serve these patties with a side salad or a dollop of plain Greek yogurt mixed with extra dill.
