- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the shrimp to the marinade and toss to coat evenly. Let it marinate for 15-30 minutes at room temperature.
- Preheat your grill to medium-high heat.
- Thread the marinated shrimp onto the prepared skewers, discarding any excess marinade.
- Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through.
- Serve immediately.
Notes
- You can add other vegetables like bell peppers or zucchini to the skewers.
- For extra flavor, grill lemon halves and squeeze the juice over the shrimp before serving.
