Make your own tangy, fizzy Lemon Ginger Kombucha. This recipe gives you an easy way to brew a gut-friendly, flavorful fermented drink right at home.

Ingredients

Scale
  • 1 gallon sweet tea base (ready for secondary fermentation)
  • 1 cup fresh lemon juice
  • 1/2 cup freshly grated ginger
  • Optional: 1/4 cup sugar or honey for added carbonation

Instructions

  1. Pour your finished kombucha base into a large, clean glass container.
  2. Stir in the fresh lemon juice and grated ginger. If you want extra fizz, add the optional sugar or honey now.
  3. Divide the mixture evenly into swing-top bottles, leaving about one inch of headspace in each bottle.
  4. Seal the bottles tightly.
  5. Let the bottles sit at room temperature for 2 to 4 days for the second fermentation, checking for fizz daily by carefully ‘burping’ one bottle.
  6. Once the desired fizziness is reached, immediately refrigerate the bottles to stop the fermentation process.
  7. Chill for at least 12 hours before serving.
  8. Carefully open the bottles over a sink the first time you check, as carbonation levels can vary.

Notes

  • Use high-quality, organic ginger for the best flavor.
  • Always use glass bottles designed for carbonated beverages to prevent breakage.
  • Monitor the second fermentation closely, especially in warmer temperatures, to prevent bottle explosions.
  • Strain out the ginger pieces before bottling if you prefer a pulp-free drink.
