Enjoy this moist and sunny loaf, perfect for using up extra zucchini. The bright lemon glaze adds a delightful tang to the tender bread.

Ingredients

Scale
  • 3 cups grated zucchini (about 2 medium)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat the eggs and granulated sugar until light and fluffy.
  4. Gradually beat in the vegetable oil and vanilla extract.
  5. Add the dry ingredients to the wet ingredients in three additions, mixing until just combined after each addition. Do not overmix.
  6. Gently fold in the grated zucchini.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the bread cools, prepare the glaze: Whisk together the powdered sugar and lemon juice until smooth and pourable. Add more lemon juice, a teaspoon at a time, if needed to reach desired consistency.
  11. Drizzle the glaze over the cooled zucchini bread.

Notes

  • For best results, squeeze out excess moisture from the grated zucchini before adding it to the batter.
  • You can add chopped nuts or chocolate chips to the batter for extra flavor and texture.
  • The glaze can be adjusted with more or less lemon juice to your taste.
