Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 cup grated zucchini (about 1 medium)
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the lemon juice, lemon zest, and grated zucchini.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  10. While the bars are cooling, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach desired consistency.
  11. Once the bars are completely cool, drizzle the glaze over the top.
  12. Cut into bars and serve.

Notes

  • Ensure your zucchini is well-drained after grating to avoid excess moisture in the bars.
  • For a stronger lemon flavor, add an extra teaspoon of lemon zest.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
