Bite-sized, vegetable-packed egg frittatas perfect for a simple, satisfying low-carb breakfast or snack.

Ingredients

  • Eggs: 12 large
  • Spinach: 1 cup, chopped
  • Bell Pepper (any color): 1/2 cup, diced
  • Onion: 1/4 cup, finely chopped
  • Shredded Cheese (cheddar or Monterey Jack): 1/2 cup
  • Milk or Cream: 2 tablespoons
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Cooking Spray or Butter for muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin with cooking spray or butter.
  2. In a large bowl, whisk the eggs and milk or cream until smooth.
  3. Stir in the salt and pepper.
  4. Add the chopped spinach, diced bell pepper, chopped onion, and shredded cheese to the egg mixture. Mix well to distribute the vegetables evenly.
  5. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18 to 20 minutes, or until the frittata bites are set and lightly golden. A toothpick inserted into the center should come out clean.
  7. Let the bites cool in the tin for a few minutes before removing them.
  8. Serve warm or store for later.

Notes

  • You can easily substitute the vegetables with your favorites, like mushrooms or zucchini.
  • For an extra flavor boost, try adding a pinch of chili flakes or your favorite spice blend.
  • These store well in the refrigerator for up to four days.
  • If you are making these ahead, they reheat quickly in the microwave.
