1 pound smoked sausage, cut into 1-inch pieces
1/4 cup olive oil
1/4 cup maple syrup
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the Brussels sprouts and sausage with olive oil, maple syrup, balsamic vinegar, garlic powder, salt, and pepper until evenly coated.
Spread the mixture in a single layer on a large baking sheet.
Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly caramelized, and the sausage is heated through.
Serve hot.
Notes
For crispier Brussels sprouts, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
Feel free to add other vegetables like chopped onions or bell peppers along with the Brussels sprouts.
This dish pairs well with rice or quinoa.
