A spicy and savory Sichuan tofu stir-fry, Mapo Tofu features tender tofu in a rich, fermented bean sauce. This classic Chinese dish offers a delightful balance of heat and umami.

Ingredients

Scale
  • 1 block (14-16 oz) firm or extra-firm tofu, drained and cut into 1/2-inch cubes
  • 2 tablespoons vegetable oil, divided
  • 1 tablespoon chili bean paste (Doubanjiang)
  • 1 teaspoon ground Sichuan peppercorns
  • 1/2 teaspoon red pepper flakes (or to taste)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth or vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. Gently boil the tofu cubes in water for 5 minutes. This helps firm them up and makes them less likely to break apart. Drain well and set aside.
  2. In a small bowl, whisk together the broth, soy sauce, sugar, cornstarch, and water. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the chili bean paste and stir-fry for about 30 seconds until fragrant.
  4. Add the ground Sichuan peppercorns and red pepper flakes. Stir-fry for another 15 seconds.
  5. Add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.
  6. Add the remaining 1 tablespoon of vegetable oil to the wok. Add the drained tofu cubes and gently stir-fry for 2-3 minutes, coating them with the sauce.
  7. Pour the prepared broth mixture into the wok. Bring to a simmer and cook, stirring gently, until the sauce thickens and coats the tofu, about 2-3 minutes.
  8. Serve hot, garnished with chopped green onions.

Notes

  • For a vegetarian or vegan version, use vegetable broth and ensure your chili bean paste does not contain animal products.
  • Adjust the amount of red pepper flakes to control the spice level.
  • Sichuan peppercorns provide a unique tingly sensation; use more for a stronger effect.
