Ingredients

Scale
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground chipotle powder
  • 1/2 teaspoon cumin
  • 1 clove garlic, minced

Instructions

  1. Combine all ingredients for the Asian Sesame Ginger marinade in a bowl. Whisk well.
  2. Combine all ingredients for the Lemon Herb Garlic marinade in a separate bowl. Whisk well.
  3. Combine all ingredients for the Spicy Chipotle Lime marinade in a third bowl. Whisk well.
  4. Place your tuna steaks in separate, non-reactive dishes or zip-top bags, one for each marinade flavor.
  5. Pour one marinade over each tuna steak, ensuring the fish is fully coated.
  6. Marinate tuna for 15 to 30 minutes. Do not marinate longer than 30 minutes to maintain texture.
  7. Remove tuna from the marinade and discard the excess liquid. Pat the steaks dry before grilling or searing.

Notes

  • For best results when searing, remove the tuna from the marinade and pat it completely dry with paper towels before cooking.
  • If you are grilling, use medium-high heat for a quick sear.
  • You can substitute tamari for soy sauce if you need a gluten-free option for the Asian marinade.
