Bake delicate, festive snowball cookies flavored with earthy matcha green tea and coated in sweet, textured coconut. These treats are perfect for your next tea time gathering.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 1 teaspoon ceremonial grade matcha powder
  • 2 cups all-purpose flour
  • 1/2 cup finely ground almonds or almond flour
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut, finely chopped

Instructions

  1. Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla extract and matcha powder until the color is uniform.
  4. In a separate bowl, whisk together the flour, ground almonds, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined into a dough. Do not overmix.
  6. Fold in the finely chopped coconut gently.
  7. Roll the dough into small, uniform balls, about 1 inch in diameter. Place them on the prepared baking sheets.
  8. Bake for 12 to 15 minutes, or until the edges are barely set and the bottoms are very lightly golden. They should remain pale.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once completely cool, place extra powdered sugar and any remaining chopped coconut in shallow dishes.
  11. Roll each cooled cookie first in powdered sugar, then in the coconut, ensuring a thick, snowy coating.
  12. For an extra layer, roll them a second time in powdered sugar if desired.

Notes

  • Use high-quality matcha for the best color and flavor.
  • If your dough is too soft to roll, chill it for 20 minutes before shaping.
  • For a richer coconut flavor, toast the shredded coconut lightly before chopping and using it in the dough.
  • These cookies store well in an airtight container at room temperature for up to one week.
