This Mediterranean Chickpea Pasta Salad offers a bright, refreshing taste perfect for meal prep lunches. It combines hearty chickpeas with crisp vegetables and a zesty vinaigrette for a satisfying cold salad.

Ingredients

Scale
  • 1 pound pasta (small shape like rotini or penne)
  • 2 cans (15 ounces each) chickpeas, rinsed and drained
  • 1 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • For the Vinaigrette:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse immediately with cold water to stop cooking. Set aside.
  2. While the pasta cools, prepare the vinaigrette. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper until well combined.
  3. In a large bowl, combine the cooled pasta, rinsed chickpeas, diced cucumber, halved tomatoes, olives, and sliced red onion.
  4. Pour the vinaigrette over the salad ingredients. Toss gently until everything is evenly coated.
  5. Stir in the fresh chopped parsley.
  6. Cover the salad and chill in the refrigerator for at least one hour before serving to let the flavors meld.

Notes

  • You can prepare this salad up to three days in advance for easy meal prepping.
  • If you prefer a tangier flavor, add a squeeze of fresh lemon juice to the vinaigrette.
  • Feel free to add crumbled feta cheese for extra creaminess, though this will make it non-vegan.
