Enjoy this hearty Mediterranean Winter Salad featuring peppery arugula, sweet roasted squash, and fresh figs, all brought together with a bright, light vinaigrette. It is a perfect, wholesome meal for cooler weather.

Ingredients

Scale
  • 1 small butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil (for roasting)
  • Salt and pepper to taste
  • 5 ounces arugula
  • 6 fresh figs, quartered
  • 1/4 cup crumbled goat cheese (optional)
  • 1/4 cup toasted walnuts or pecans
  • For the Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast the squash for 20-25 minutes, or until tender and slightly caramelized. Let it cool slightly.
  4. While the squash roasts, whisk together all vinaigrette ingredients in a small bowl until well combined.
  5. In a large bowl, combine the arugula and the slightly cooled roasted squash.
  6. Drizzle half of the vinaigrette over the salad mixture and gently toss to coat the greens.
  7. Divide the salad onto serving plates. Top with the quartered fresh figs, crumbled goat cheese (if using), and toasted nuts.
  8. Serve immediately with the remaining vinaigrette on the side.

Notes

  • Roasting the squash brings out its natural sweetness, which pairs well with the peppery arugula.
  • You can substitute butternut squash with acorn squash or sweet potato if needed.
  • To toast the nuts, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant.
