Bake beautiful, rustic individual fruit tarts filled with mixed berries. These Mini Berry Galettes offer a simple, pretty, and shareable dessert perfect for any gathering.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar (for dough)
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 4 to 6 tablespoons ice water
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. In a large bowl, whisk together the flour, salt, and 1 tablespoon of sugar.
  2. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  4. Form the dough into a disk, wrap it in plastic, and chill for at least 30 minutes.
  5. In a separate bowl, gently toss the mixed berries with 1/4 cup sugar, cornstarch, and lemon juice.
  6. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  7. Divide the chilled dough into 4 equal pieces. On a lightly floured surface, roll each piece into a rough 6-inch circle.
  8. Spoon the berry mixture into the center of each dough circle, leaving a 1 1/2-inch border.
  9. Gently fold the edges of the dough up and over the filling, creating a rustic, open-faced tart shape.
  10. Brush the exposed dough edges with the beaten egg and sprinkle with coarse sugar.
  11. Bake for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Let the galettes cool slightly on the baking sheet before transferring them to a wire rack.

Notes

  • Use very cold butter and ice water; this keeps the crust flaky.
  • Feel free to substitute other seasonal fruits for the mixed berries.
  • These taste wonderful served warm with a scoop of vanilla ice cream.
