- 12 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped red onion
- 24 pimento-stuffed green olives, drained
- Red food coloring
- Black food coloring
- Black edible marker
- Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
- Bring water to a boil over medium-high heat. Once boiling, remove from heat, cover, and let stand for 10-12 minutes.
- Drain hot water and immediately fill saucepan with ice water to stop the cooking. Let eggs cool completely, then peel and halve lengthwise.
- Scoop out the yolks into a medium bowl. Mash the yolks with a fork until smooth.
- Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Mix until well combined and creamy.
- Stir in chopped celery, green bell pepper, and red onion.
- Spoon or pipe the yolk mixture back into the egg white halves.
- For the eyeballs: Place one olive on top of each deviled egg half.
- Using a small paintbrush or toothpick, tint the white of the olive with red food coloring to resemble veins.
- Add a small dot of black food coloring to the center of the olive to create the pupil.
- Use a black edible marker to draw a thin line around the pupil for definition.
- Arrange the Monster Eyeball Deviled Eggs on a platter and serve.
Notes
- For firmer egg whites, you can gently scoop out a small amount of the white from the bottom of each half to create a stable base.
- Feel free to adjust the amount of mayonnaise and seasonings to your preference.
- Other options for the pupil include a small dot of black olive or a tiny piece of black edible glitter.
