Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • Pinch of cayenne pepper (optional)
  • 4 cups carrots, sliced into rounds
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1/2 cup dried apricots, chopped
  • Salt and black pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Cooked couscous, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Stir in the minced garlic, ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1 minute until fragrant.
  3. Add the sliced carrots, rinsed chickpeas, diced tomatoes, vegetable broth, and chopped apricots to the pot. Stir everything together.
  4. Bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it cook for 25 to 30 minutes, or until the carrots are tender.
  5. Remove the lid for the last 5 minutes if the sauce is too thin. Season with salt and pepper to your liking.
  6. Serve the tagine hot over prepared couscous. Garnish generously with fresh cilantro or parsley before serving.

Notes

  • This tagine tastes even better the next day as the spices meld.
  • For a richer flavor, add a tablespoon of honey or maple syrup with the apricots.
  • If you do not have a tagine pot, any heavy-bottomed pot with a tight-fitting lid works well.
